At the heart of the space are state-of-the-art enomatic dispensing machines, a technology usually found in wine bars reimagined here for agave spirits. With a preloaded tasting card, visitors can guide themselves around the room, sampling ‘a little sip’ from an ever-changing lineup of exceptional and often elusive bottles, most sourced directly from Mexico. Despite its playful self-serve element, Sorbito maintains an intimate and welcoming atmosphere, with knowledgeable staff on hand to guide visitors through their tasting journey. Every spirit poured is also available to take home either in its original format or in Sorbito’s new returnable 200ml bottles, designed to make world-class mezcal more accessible. While mezcal is the beating heart of Sorbito, the menu also offers a handful of carefully chosen companions: crisp beers on draft for easy sipping, a rotating cocktail of the week that brings playful twists on agave traditions, refined non-alcoholic options for those taking it slow, and a small yet thoughtful selection of bar snacks perfect for pairing with a drink and enjoying in the early evening. The Tequila-themed tasting room and bottle shop Sorbito, created by the Sin Gusano project, recently opened in Stockwell Newington, London. It has become the latest highlight in the “Mescal One Mile” area of the city. This new store not only offers tequila spirit tasting services but also operates a bottle retail business, creating a one-stop experience space for tequila enthusiasts in London. Sorbito introduced the Enomatic self-service dispenser commonly found in bars, but innovatively applied it to the tequila sector. Customers can use the self-service system with pre-loaded cards to select their favorite tequila varieties for a “small sip” tasting. Most of these beverages are directly imported from Mexico, offering a variety of options such as mezcal and tequila. Although centered around mezcal, Sorbito’s menu is also rich. Besides draft beer and weekly rotating signature cocktails, there are also non-alcoholic beverage options available.
